Definitely my Mom's chili - it freezes wonderfully, and then all you have to do is make rice and heat up the chili.

Vegetarian Split Pea Soup---sometimes I add a lot of cilantro or cumin to spike up the taste from regular split pea soup seasonings. Good over leftover rice for a complete meal in itself!

I always freeze my lasagna. It is hard to make a small batch so our leftovers go right in the freezer for another night.
ReplyDeleteHey Lisa! I would say my favorite is the pizza casserole we made at the last meals meetup. We've made it a few more times ourselves and I LOVE how quick it whips up and perfect it cooks even after it was frozen. Oh, and that it is VERY kid-friendly! ;-)

ReplyDeleteMy family loves Potato Taco Casserole. I make it with cooked taco meat (any meat you want), then a layer of cheddar cheese, a layer of baked tator tots, then another layer of cheese. Sometimes I'll top it all with crumbled tortilla chips. You can add all sorts of variations to this and eat it alone like a casserole or as a filling in tortilla or taco shells. You can also split it pretty easily into small portions which works great for me since I'm often eating dinner all by myself.

ReplyDeleteI like to make the sauce ingredients for chicken picatta and freeze them in indiv. containers. Then all I have to do is saute' the chicken and add the other frozen ingredients.

ReplyDeleteWe love to make an Argentina dish that has meat, noodles, tomato sauce, and lots of veggies (especially butternut squash!). It's easy to make a ton and then we freeze the rest.
