Taco Bake

6 flour tortillas
1 lb ground turkey (beef or chicken can be substituted)
1 small onion
1 16oz black beans
1 pck taco seasoning
8 oz sour cream
1 c. salsa
2 cups shredded cheese of choice (cheddar or co-jack work well)

Brown meat and small onion until meat is no longer pink; drain. Add taco seasoning packets and water according to package. Spray a 9x9 baking dish with non-stick spray. Layer tortillas with beans, meat, sour cream, salsa and cheese. Repeat layers with cheese being last layer on top. Cover and bake @ 350 until cheese is melted and heated through (about 20-30 min) Uncover and bake additional 10-15 min.

  1. I really liked this taco bake. And the ground turkey is a nice change from the beef (and not at all noticable to my picky husband, who "hates" ground turkey)! One note, though...We used a little under a cup of salsa per pan & that is plenty! If you have extra salsa, do not use it or this dish could easily turn soupy!

  2. Okay, so I served this (as leftovers, even) to my MIL & she LOVED it, so it isn't just me. This recipe is great!

  3. The IL group just made this, too. We followed Tristy's advice and used less salsa and it tastes great; not soupy at all.

    We did have a problem fitting it into our pans, though. Using 8x8 or 9x9 pans, we fit one tortilla per layer and once we made our 4 meals, we had a whole pound of ground meat left over. So we made 4 more pans with just a few layers (for a lunch). Next time, we would do these in a 9x13 and use a tortilla and a half per layer.

    Another suggestion: as the directions say to cover the dish for the first part of baking, don't add the top cheese until you're ready to remove the cover or the cheese will stick to the foil!

    And I second the notion that it's excellent as leftovers! Possibly even better.
