Hamburger Hash Brown Bake

4 c frozen shredded hash browns, thawed
3 T veggie oil
1/8 tsp pepper
1 lb ground beef
1 envelope brown gravy mix (or canned/jar gravy)
1 c water (if not using canned/jar gravy)
1 pck (10 oz) frozen mixed veggies, thawed
1/2 tsp garlic powder
1 c (4 oz) shred cheddar cheese, divided
1 can (2.8 oz) french-fried onions, divided

Combine hash browns, oil & pepper. Press onto bottom & 1 in up the sides of ungreased square baking pan. Bake uncovered @ 350 for 15 min. In skillet cook beef until no longer pink; drain. Stir in gravy mix & water. Add veggies garlic powder. Bring to a boil. Reduce heat; cover simmer for 5 min. Stir 1/2 cup cheese 1/2 onions. Bake uncovered @ 350 for 15 min. Sprinkle w/remaining cheese onion. Bake 5 min longer. Serves 4-6


  1. Okay, so either this recipe is yummy or I was really, really hungry when we ate it. Even Hala, my most picky eater, ate it. (though she did pick out the peas). Terry not a fan because he said it was too "heavy"...but he likes canned herring, so I just can't trust his taste buds! ;)

  2. Update: Everyone else in the WI group LOVED this recipe, so it wasn't just me!!!
