To sum up: today was not the best cooking day we've ever had. We were down to four cooks (we knew this before we went shopping but we based our menu on having 5 people) and of those four, one had to come late and one had to leave early. Combined with some fussy recipes it was a little more difficult than normal.
But things so often go so smoothly so I'm sure next month we'll be back in our regular groove.
We made:
Chicken Breasts in Phyllo (6 servings each)
Chicken Enchiladas (14 enchiladas each)
Turkey Artichoke Casserole (4-6 servings each)
Peanut Butter Bars (24 servings each)
And we spent a little over $40 this month which is quite a bit more than usual but we required a lot of some more expensive ingredients including chicken, artichokes and peanut butter.
I didn't take any pictures during the cooking but I will try to get photos as I cook my meals so check back in the recipe posts to see them later.
We haven't decided on a menu or a cooking date for February but as soon as we do, I will post it!
