2 cups pineapple juice
1/3 cup bottled Italian dressing (diet is fine)
1/2 cup soy sauce (low sodium is fine)
1 tsp. ground ginger
2 cloves garlic, minced
Dump all ingredients in a freezer bag and squish to mix. Add fresh meat (see below for quantity), label and freeze.
Thaw before preparing. Grill, broil, or pan-fry pork chops or chicken breasts. Marinade must be boiled for two minutes before eating or discarded.
Makes approximately 3 cups of marinade- enough for 6-8 pork chops or 4-6 chicken breasts.
I really, really liked this marinade. It was very light, so the girls ate it really well, but it was something different than plain chicken. (I baked it in the oven with the marinade.--In the future, I may make it like the lemonade chicken & thicken the sauce. Also, if you like a little spice, some hot red pepper flakes would do the trick!)
