Ham & Cheese Muffins

This is a recipe for Ham & Cheese Muffins, another make-ahead breakfast item. Linked to HillbillyHousewife.com where I found the recipe.

■3/4 C low fat Cheddar cheese
■1/4 C grated Parmesan cheese
■1 3/4 C baking mix
■1 C skim milk
■1/4 tsp pepper
■1/4 C low fat ham, chopped fine
In a large mixing bowl mix together the two cheeses, the milk and the baking mix.
Be sure the baking mix is completely moistened.
Add the pepper and ham and continue to mix until the pepper is mixed in well.
Preheat the oven to 400 degrees.
Spray the muffin tin cups with a non stick cooking spray.
Pour the batter into each muffin cup filling them 2/3 full.
Bake 12 minutes or until a golden brown on top,

These muffins are great for a quick lunch. Add a salad or even a fruit and you have a lunch that’s fast, easy and really yummy.

  1. These are so, so good! I think I like them even better than the Sausage Bisquits because they aren't so dense. They would also be good made with sausage. I will say that one recipe does not make very many muffins. It says one recipe will make 12 muffins, but IMHO they are half muffins, so I would recommend doubling the recipe (at least) for each person. This is a recipe that I will make often, I think!
